WHAT WHEN WINE RECIPES: Ingredient Recommendations

Here are my favorite Paleo-friendly versions of common cooking ingredients, which may come in handy when making any of What When Wine's awesome 50+ gluten-free recipes developed by chef Ariane Resnick. While most of these refer to online listings, many are available at your local grocery store, particularly ones like Whole Foods and Sprouts, and even increasingly more at mainstream grocery stores like Kroger and Ralphs. Also feel free to search out your own, and of course, I always advocate going as "real," "natural," and unprocessed as possible when it comes to all of these. Also, please always check the products to confirm any descriptors listed, as they are subject to change.

MCT Oils: My favorite is Clean MCT C8 Only, in Glass containers!! Yey!! Olive Oil´╗┐´╗┐ (Organic, Cold-pressed, Unfiltered)

Sesame Oil (Organic, Toasted, Unrefined) Note: I don't generally recommend seed oils, but I believe sesame oil is more benign, and this is an important ingredient for one of the What When Wine recipes.


You can totally make your own fermented foods, per the directions in What When Wine, as well as my online Fermentation Guide.  But there are some good yummy store-bought versions available (just make sure to always purchase raw!

Fermented Sauerkraut/Veggies Brands: You can find these at many Whole Foods. Here are my favorites! Rejuvenative Foods (My all time favorite! You can find them at some Whole Foods, or order online. I adore their Organic Raw Salt-Free Vegi-Delite Zing Salad and  Organic Raw Salt-Free Cabbage-Dill-Sauerkraut) , Wildbrine (My favorite is their Organic Arame Ginger Salad and Red Beet & Red Cabbage), and Farmhouse Culture (Love the Organic Horseradish Leek and Classic Caraway!) 

Kombucha: Kombucha is a fizzy, fermented drink made from brewed tea and a bacteria/yeast culture. Some people swear by it, others hate it. Some people  thrive on it, others react negatively to it. I personally don't fancy it, as most versions contain numerous ingredients, additives, and sugar. That said, feel free to try it out for yourself. There are tons of brands out there, with a wide selection available at Whole Foods. When choosing kombucha, check for added ingredients and sugar, which often run rampant. From my research, here are brands to consider: High Country KombuchaHealth-Ade, Tonica,  B-tea Kombucha, Brew Dr. KombuchaGTÔÇÖs Enlightened Kombucha, Kombucha Dog (Kombucha Dog is non-diluted and therefore higher in alcohol content.)


It's super easy to make your own nut flours per the instructions in What ´╗┐´╗┐When Wi´╗┐´╗┐ne, but here are some commercial versions in a pinch!

A2 Milk (This brand is available in many grocery stores. The cows come from sustainable, humane farms, certified by the Validus Animal Welfare Review, with no growth hormones, rBST or antibiotics used. That said, the milk is not necessarily grass-fed. I recommend researching local farms and co-ops to find grass-fed A2 milk, if you're going to be drinking a substantial amount of it.) 

Goat Milk (Goat milk is naturally mostly A2.)

Almond Milk (Organic, Unsweetened. It's super hard to find almond milks without additives. This one only contains almonds, acacia gum, and sea salt. )

Coconut Milk: You can get coconut milk with no additives or thickeners at Trader Joe's!


All Purpose Seasoning (Organic, Seed-Free, Salt-Free)

Chili Paste (Organic)

Nutritional Yeast (Non-fortified, AKA: No Added Folic Acid!)

In general, I advocate eating fresh meat products with low toxin cooking methods. That said, sometimes ya just fancy some bacon, or want to make What When Wine's deviled egg tuna salad, or tuna salad deviled eggs. Here are, in my opinion, good options. You can order many of these online, and use store locaters to find retail locations.  Feel free to check your local grocery stores like Whole Foods, Trader Joe's, and Sprouts, for options which contain no sugar or additives, and are ideally responsibly-raised and/or pastured/wild caught. Note that when multiple bacon products come up, I'm referring to the sugar-free ones.
